Our Coffee
Coffee is a traveler. It begins its journey thousands of miles from Dupont Circle, on hillsides and in valleys most of us will never see, tended by people whose names deserve to be known and whose work deserves to be honored. At Emissary, we built our coffee program around that idea. Every cup we serve is a small act of dispatch, carrying something real from a distant place directly to you.
Why Open Seas
We partner with Open Seas Coffee Roasters because they share our belief that great coffee starts with great relationships. Open Seas works directly with producers, not through layers of anonymous trading, which means the people growing our coffee are known partners, not distant suppliers. That relationship shapes everything from the beans we choose to the way we talk about them behind the counter.
Our house beans reflect that partnership: Halcyon, our dark espresso roast; Neptune's Folly, a medium roast built for drip and cold brew; and a Decaf Colombia for those who want the ritual without the caffeine. Each one is chosen and dialed in with care, from the grind to the extraction, so what's in your cup reflects the work that went into growing it.

Ethical sourcing isn't a label we put on our coffee. It's a standard we hold ourselves to. That means paying fair prices that reflect the true cost and value of the work, choosing partners who treat their farmers and workers with respect, and staying curious about where our coffee comes from long after the first order is placed.
We believe a cup of coffee should be traceable back to the hands that picked it. When that connection is strong, everyone benefits: the producer earns what their work is worth, the roaster can guarantee quality and consistency, and you get a coffee that tastes like it was made with intention.
